BEYOND FRITTATA

Here is a spectacular recipe from my friend Noella, who never makes anything that I don’t love. Even if you find yourself culinarily challenged, don’t be afraid of this one. It comes out like an exquisite pizza without crust.
First of all, preheat your oven to 350 degrees. If it’s been awhile, you might want to check it first for stored linens or other inappropriate items. No need to burn the house down.
Crack 12 eggs into a bowl, discarding shells. (Well, some might need explicit instructions). Add 20 cut-up cherry tomatoes, 7- 9 small pieces of Canadian bacon or pepperoni (like big slivers), a couple of handsful of cut-up fresh spinach, garlic (at your discretion), salt (go easy), pepper to your taste, and a cup of feta, diced. I suppose you could use a different cheese but the feta is wonderful. Stir all together until well distributed. Pour into a buttered baking dish – a good sized pie pan works well, or a cast iron skillet. Bake for 45 minutes or so.
