OUR FRIEND THE EGG

Let’s consider the common, ordinary egg.  Shame on us for taking it for granted. Its modest appearance and easy availability belie its riches. Unfairly demonized in years past, the victim of bad press, its sullied reputation has finally been redeemed by the experts. The egg is no longer anathema.
Many now consider eggs to be a superfood. Under that delicate shell lie stores of Vitamins A,B,D,E, and K as well as a plethora of minerals, all for a mere 77 calories. Yes, it is high in cholesterol, but it’s the “good” kind. There is almost no link between eggs and heart disease. This neat little ovule will provide you with choline – not everyone gets enough of that. Haven’t you wondered about yours? Fret no longer.  It’s also good for your eyesight. We haven’t even mentioned its stellar value as a satisfying source of protein, perhaps its strongest selling point.
And eggs are cheap! Don’t even think about where that egg came from. Many of us also had ignoble beginnings of one kind or another. Just partner with the unassuming egg and begin to dream. Start small with an egg or two gently poached in butter. Then move on to omelets filled with sweet caramelized veggies, crispy bacon, smokey cheese. How about experimenting with Eggs Benedict or Quiche? Not as complicated as you might think. The possibilities go on and on.
For a short time, COVID 19 forced me on a hunt for this favorite staple. But eggs have been in good supply for weeks. Another constant in these changing times, another reason to be thankful.
