IN DEFENSE OF BACON

THERE’S JUST SOMETHING ABOUT BACON. THE VERY WORD BRINGS ON A WAVE OF NOSTALGIA FOR PAST BREAKFAST GATHERINGS AROUND THE KITCHEN TABLE, THAT MAPLEY AROMA WAFTING THROUGH THE MORNING SUNLIGHT. AND YET, THE GUILT. IT’S FAT. I SHOULD AVOID IT, OR AT LEAST NOT CHOMP DOWN A PLATEFUL AT ONE SITTING.
SO LET’S TAKE A CLOSER LOOK AT BACON. BACON IS OUR FRIEND, CONTRARY TO THE BAD RAP IT’S RECEIVED FOR DECADES. HERE ARE SOME BACON STATS. 37 GRAMS OF HIGH QUALITY ANIMAL PROTEIN, AN ARRAY OF B VITAMINS, DECENT AMOUNTS OF IRON, MAGNESIUM, ZINC AND POTASSIUM.  NO APPRECIABLE CARBS, NO SUGARS. MUCH OF ITS FAT IS HEART HEALTHY, SERIOUSLY. THERE’S MORE, BUT I DIGRESS.
YES, CALORIES, BUT GOOD FAT CALORIES, NOT CARBS. JUST DON’T PAIR IT UP WITH A 6 INCH STACK OF PANCAKES FLOATING IN MAPLE SYRUP. LET’S GIVE BACON A CHANCE IN OUR LIVES. IT SCRATCHES SOME DEEP INNER ITCH, TRIGGERS LOVELY MEMORIES, AND CREATES A GENERAL AURA OF WELL BEING. GIVE YOURSELF OVER TO BACON, WITH MODERATION, AND REJOICE.  A GREAT COVID ANTIDOTE.
